World Foods International Fusion Recipe Swap Challenge!
I don’t blog a lot about food, but, I couldn’t say no, when World Foods challenged me to swap recipes, with another blogger, from somewhere else in the world. I had two pen pals in elementary school, and I loved writing to them, so this challenge brought back great memories for me. World Foods paired me with Mandy, of One Slice of Lemon, in the United Kingdom.
We sent a lot of emails back and forth and I have to admit we had a little trouble coming up with unique recipes to swap, because so many of our meals are actually pretty similar, in England and Atlantic Canada!
In the end, Mandy decided I should try a traditional green curry recipe, since it is one of her favourite recipes! I have to admit I did swap a few ingredients for some of my favourites, and ones that are readily available here in Atlantic Canada. The dish was really easy to cook, since the main World Foods Green Curry sauce was already provided to me!
Thai Green Chicken Curry
1 jar WORLDFOODS Thai Green Curry Sauce 2 tablespoon cooking oil 12oz chicken, cut into cubes 1 red chili pepper, finely shredded (I also added fresh diced red pepper) a handful of green beans, trimmed and halved ( I used broccoli) good handful of basil leaves (I used 1 Tablespoon of dried basil) boiled rice, to serve (enough for four people)Cooking Method:
1) Fry cubed chicken in 2 tablespoons of cooking oil. When chicken is almost completely cooked add in beans (or broccoli and red pepper). Allow to cook fully, then add in thai green curry sauce and basil leaves. Reduce heat to simmer on low, stirring occasionally.
2) Cook your choice of rice, using the directions provided. We really like brown rice.
3) As soon as the rice is cooked, serve the green chicken curry sauce on top of the rice. Add any garnishes you prefer such as a fresh basil leaf.
I think this dish would also be delicious, with fresh mango added to the green curry sauce at the end of the cooking time.
My husband likes to get a little creative so he garnished our plates with baguette dipped in baba ganoush!
My husband and I have worked for years on teaching our children to try new foods, so they are pretty great eaters. They absolutely loved the World Foods Green Curry Sauce! It wasn’t too spicy for them and was full of flavour. I will definitely cook with more World Foods Sauces in the future. Some of the sauces I’m going to try are the Green Curry Cooking Sauce, Sweet Chili Coconut Stir-Fry Sauce, and the Lemon Grass Stir-Fry Sauce.
I think it’s pretty cool that each World Foods sauce uses 100% natural ingredients, and traditional herbs and spices from Thailand, Malaysia, Indonesia, Cambodia, Vietnam, China, Singapore and India.
