I was having some fun in the kitchen today trying to adapt one of our family’s favourite recipes for frogs (chocolate macaroons) into a healthier version without white sugar, etc. when something surprising happened. When we were done and having our first one we found out they tasted just like Eatmore, one of my husband’s favourite candy bars. I thought I’d better share this with the world but don’t blame me if you don’t like them! They’re a little strange (but delicious)!

 

Original Frogs Recipe

1 1/2 Cups Sugar

1/2 Cup Margarine or Butter

1/2 Cup Milk

Bring to a boil in a saucepan over medium heat, then add

3 Cups Oatmeal

1 Cup Coconut

5 Tbsp Cocoa

1 Tsp Vanilla

Pinch of Salt

Mix well then drop by spoonfuls onto pan and cool.

 

Eat More Frogs Recipe (This is doubled from original)

2 Cups Raw Sugar

1/2 Cup Honey

1 Cup Butter or Coconut Oil

1 Cup Milk (I used Almond Milk)

Bring to a boil in saucepan over medium heat then add:

6 Cups Oatmeal or 5 Cups and my Optional ingredients below

1/2 Cup Coconut Flour (I didn’t have any Coconut – this could be important in the Eat More taste so I would stick with it if you can)

5 Tbsp Cocoa

1/2 Cup Chocolate Chips

2 Tsp Vanilla

Pinch of Salt

Optional – I also added about 1/3 Cup chopped walnuts and 1 Cup puffed Quinoa. I really thought the quinoa gave the bars a unique texture, didn’t change the taste and definitely added nutrition!

Stir well and then either drop by spoonfuls or to make eat more like bars spread out on baking sheet in between two layers of wax paper. (The first layer on the bottom so they don’t stick and the second layer on top to help spread/smooth the mixture) Chill, then cut and serve. I had to peel them away from the wax paper and they were a little sticky. If anyone has any suggestions for my recipe please let me know!!
